Suji Halwa is a classiceveryday tasty North Indian sweet made with fine semolina, or cream from wheat (farina), sugar, ghee, and nuts and is flavored with cardamom powder. The sweet is popular in Maharashtra the state of Maharashtra, this sweet is known as Sheera. Semolina is also known suji, sooji, or the word rava. This simple halwa recipe that melts in your mouth is ready in just 15 minutes. The recipe I am sharing is a recipe from our family that we've been making for years during family gatherings celebrations, special occasions and holidays.

Suji Halwa is also referred to by the name of Rava Sheera within Western India and Rava Kesari in South India. The process of making it is similar but with some ingredients changing from time to time.
Although semolina or rava is the main ingredient. In certain variations milk is used instead of water, and is referred to"milk kesari. To flavor the drink, usually cardamom powder is used.
The halwa can also be made to mark an occasion of auspiciousness or for a pooja celebration. It can also be a celebration like Diwali, Ganesh Chaturthi or an event of religious significance held at home, or perhaps you simply want something sweet. It can also be used as an excellent breakfast option or dessert after a meal.
Because this is a simple and quick recipe for halwa, there is no excuse or reason to cook it. I usually make sooji halwa to serve as an Bhog or an naivedyam to offer to gods.
We create Suji Halwa and puri for the Navami ceremony during the Navratri festival. Kala chana can also be made. On this day, we offer Kala chana, suji puri and halwa to the little girls (kanjak) that represent the Goddess Mother.
The rava kesari , which has become popularin South India typically has a synthetic orange color added. However, you can create similar rava kesari using natural coloring agents such as threads of saffron or saffron powder.

Sooji Halwa Proportions
Sooji Halwa is usually prepared in large quantities on special occasions or religious celebrations. If you are planning to cook an enormous amount of it, there's an exact proportion to adhere to.
The proportion of suji to sugar to water to Ghee is 1:1:2:0.5 in the measurement of a glass or cup. I slightly alter this ratio and use some ghee but not as much sugar.
- Sugar for one cup of sooji, or even rava, I would add 2/3 or 3 cups of sugar. This means that the suji Halwa is less sweet or is more sweet. One cup of sugar provides an extremely sweet taste.
- Ghee - Also, I add 2/3 cups of ghee to 1 cup suji. For me, 2/3 cup is an adequate amount of Ghee. You can reduce or boost the amount of ghee depending on what you like.
- Water I use 2.5 cups of water to 1 Cup of Suji. You can also include 2 cups water. The quantity of water could be increased based on how good the flavor of the rava as well as for those who prefer an pudding-like consistency.
